Cracked up Coolers TIC Recommendations please.

Hello all,
First time topic creator long time reader 

After long hours of sifting through specs, reviews, etc.. I find myself stuck with decision paralysis.

I am looking at the usual suspects in the sub $350 price range and they are all starting to look the same to me.

Here is my use case:
-Mac user here (early apologies to the pc family) thus need compatability with apple computers (software, etc.)

Two of my common use cases:
One
-I stress test construction of coolers, eskies, thermal shippers, passive temperature sensitive storage devices, etc. loaded with dry ice (-78°C).
--I need to be able to find cracks (sometimes microfissures) in the insulation hidden within plastic walls, thermal conductive paths, etc.
--I need to be able to monitor them.

Two (secondary to one)
-I build many IoT devices (tracking and monitoring units) that I would like to uncover energy sucking chips, pcbs, etc.

Would someone please be kind and provide some guidance on either what should I focus on with specs or just straight up say "Get yourself a TC004, HIKMICRO B01, Kaiweets, etc.?

Should I even consider the brick format cameras over a trigger gun style?
