So my basic math shows that I should go with the 30v 3a module, which gets up to 96W giving enough space for the PSU to breathe. But then, I see a lot of builds where the PSU is weaker than the module. I am willing to invest a bit more in a DPS3005 or DPH3205 as I want to use it as a hobby bench power supply, but they are rated at 150 and 164W output accordingly. Can they overload the PSU if I don't check the numbers all the time?

Unless you can limit maximum current in settings, I do not recommend using a more powerful module since it opens possibility of overloading the PSU. Also I don't see a point buying buck-boost variant as it's almost in a price range of Gophert  NPS-3203 and NPS-1601 and you get a finished product, not something you need to slap together.
