I have a UCA200 that I got for $0.25 at a garage sale, but it only does 48kHz sample rate.

If you want a moderately fast digitizer, it might be best to just build one. Especially since you need less than 1MHz sample rate. Just an opamp AFE, an ADC, and a FPGA or microcontroller is all that's needed.
Cryptocurrency has taught me to love math and at the same time be baffled by it.

Cryptocurrency lesson 0: Altcoins and Bitcoin are not the same thing.

The proper tool for this job would probably be something by companies like Audio Precision.

I agree with Alm "companies like Audio Precision" or ShibaSoku, I think these equipment are expensive maybe with a price tag of US$5,000 or more!
