Protection from humidity and condensation

I want to measure temperature and humidity in a refrigerator. I want to use a humidity sensor like Sensirion SHT30 series. I am going to use a thermistor glued to a piece of steel for thermal mass. 

The board will be placed in a small enclosure with slots to facilitate air movement. How do I protect the board from humidity, condensation and probably occasional spills?

you have some pcb coating products,  you can dip them or  spray them

I will have a enclosure large enough to fit the PCB. I can't seal the enclosure as I am using a surface mount humidity sensor. I will go with conformal coating as suggested by @coromonadalix

I guess it’s common sense but I’ll say it anyway. Don’t coat the humidity sensor.

No harm in saying it ;D

Of course, I will not coat. I am trying to figure out a way to cover the humidity sensor. I would appreciate very much any advice on that front.

Mask it with masking tape and spray, don’t dunk the board.
