You can see how I made a stencil from a pop can, and how I held the boards.

The paste does not have to be perfect. Surface tension will cause the solder pull into the pads when it melts.

I use an old credit card to spread the solder paste. On occasions I have adjusted the solder paste by mixing it with paste flux.
