As for fave youtube videos rather than channels, I do I love this 'Wintergatan - Marble Machine' one (and the build videos too).
They "borrowed" much of the basic functionality of their "Marble Machine" from the Mergenthaler Linotype machine.

I was quite surprised that the pieces were not laser cut or at least CNC shaped.

Wow, great minds do think alike ;)  I have also picked up a few new ones while going through the list  :-+

I checked and I did not see these ones listed yet, although I might be mistaken:

FFcossag                PBS Space Time          Frank Howarth               DigitalRev TV
The 8-bit Guy         Sixty Symbols             mtmWood                     SketchyTrav
FeedbackLoop         FlinnScientific             Houseimprovements
Electron update                                       The Frugal Chef
John Ward                                               Darbin Orvar
Sammy Kamkar

Enjoy!

Most of what I'm subscribed to seems to have been already mentioned. Apart from these:

Bruce Land (lectures and student projects from the Cornell University School of Electrical and Computer Engineering) https://www.youtube.com/channel/UCgpQgWLXEZWSplxs1eB9Gvw

wdtvlive42 (occasionally interesting archive films) https://www.youtube.com/user/wdtvlive42

How about some more channels with cute models?
Jeri Ellsworth has been mentioned several times before.

TastyPCTV is basically a show with a really cute model who happens to have an interest in high performance computing.
Nixie Pixel is similar, but more about software than hardware.
Aaliyah Johnson is another channel featuring a cute model, including some videos that include technology.

And then there's Freelee the Banana Girl, which is mostly about healthy diet and fitness.
Cryptocurrency has taught me to love math and at the same time be baffled by it.

Cryptocurrency lesson 0: Altcoins and Bitcoin are not the same thing.

No idea what I was searching for when I found this guy: https://www.youtube.com/user/BuckUpholstery/videos

And couldn't be further from what I'm generally interested in, but I like his style. Traditional soft furniture restoration.

I don't think "model" is quite the right word.

Then there's April Wilkerson for those into woodworking.

Of which, this video would be very relevant for those building electronics labs:

I actually know several engineers who are also models and they don't mind being called models. Does Jeri hate being called that?

On the subject of models and engineering, here's yet another site that features both, but it's more of a summary than a guide:
