Go with what you like as long as you liking it is not being influenced too much by the university you're studying in
And regardless, buy "the art of electronics" by Horowitz.
There are many jobs were you specifically design PCBs, it's called PCB design engineer. I have done it for a while, you need patience and concentration
In many companies that are not too big, that may not fill the full day.
You will need to integrate your knowledge on the topic of PCB design, I have NEVER met someone good at it straight out of university.
Stay away from the internet on the topic.
Some good books on the topic:
EMC Made Simple: Printed Circuit Board and System Design
Printed circuits handbook seventh edition (not to read, but to keep as a reference on the topic)
