Well it depends on what you want get from me (extras). If you grab only the plastics, you need everything else. I don't recomend doing this if you don't have any back experience with printers or machines, it can be messy self-source every piece when "i don't know what i'm doing".
To better anwser your question, you can explore manual and see what you need: https://manual.prusa3d.com/c/Original_Prusa_i3_MK3_kit_assembly

This set have all plastic parts beside LCD cover, which print can survive without or i can print one for you.
You also can compare prices at thier store: https://shop.prusa3d.com/en/34-mk3-and-mk3s-printer-parts

These plastic parts will only make your life much harder as sourcing required parts won't be easy or cheap. If you need a 3d printer just buy it. Ensure it has automatic bed leveling. Prusa mk3s is a good one, but requires quite a bit of patience to assemble (expect to spend the whole weekend). Also print quality may depend on how well you assembled it. A friend of mine ordered it pre-assembled and had to send it back due to quality issues. Then he ordered it as a kit and assembled himself. He said printing quality quite improved.

That's true.
Assembly kit is always better when people know what they are doing. Pre-assembled machines suffer from shipping impacts that may damage or descalibrate things. Anyway they recommend to recalibrate after turn ON. People who are looking for a plug and play machine may be disapointed with prusa's and most of others.
