Twitch is only for game streaming.
Justin.tv is for general content.
Youtube allows you to stream 720p or even higher and it works well for everyone and have a very small amount of ads, unlike ustream that has popups or cuts stream completely to run a 10-15s ad every 15 minutes or so. Twitch/Justin is just slightly better, but still shows ads a lot.
Youtube also makes the recorded stream available almost right away, I believe with justin.tv/twitch you need some pro account to do that, which costs money.
Also, Youtube works well for Dave because all subscribers receive notifications when they check Youtube automatically - more people watch live streams this way. A lot of people don't check the eevblog website or the forum to learn about when the next live stream will be, in the past lots of people missed live shows because of this.
Yeah, some countries like Germany won't be able to watch live.

Dave, if Wirecast doesn't support it, you could use something like Open Broadcast Software to stream 720p 2-3mbps to Youtube and at the same time stream 360p or 480p 1mbps to Ustream or another website. That would make everyone happy.
