I'm looking at a solid state relay:

$File/Lcc110.pdf
The Absolute Maximum Ratings and Electrical Characteristics list 350V and 120mA continuous as max values.
My question is: are these combined values, or independent? Can I run 500mA at 25V through this thing? Or can I not exceed either spec?

As soon as you exceed one of these values you leaving the allowed operating conditions.

Technically, it cannot be 350V and 120mA at the same time, since one is for conducting the other one is when it is off.
Otherwise it is only rated for 120mA, so obviously, you cannot use it for 500mA

Remember also that you shouldn't operate a device at Absolute Maximum Ratings, that will lead to unreliability in practice.
Pay attention to things like maximum ambient temperature, temperature rise due to power dissipation and de-rate according to the appropriate graphs in the datasheet.
