One of the best places to start is the Aduino website, it has everything you need and a very active help forum.

Start by looking here for  beginner projects  -

The most traditional way to start with microcontrollers is to blink an LED.

For a first bigger project I'd go with a clock of some sorts. Clocks are fun and you will learn a lot - a basic clock is simple, but you can improve tons of different things on it.
Believe it or not, pointy haired people do exist!

once you've got the blinking LED down, Cylon Eyes is always a good next step.

Just think about what you would want to control in the real world using software.

Recently I wanted to add bluetooth to my car stereo, so I got an arduino and got to coding.

maybe you would like a laser trip wire in your hallway that will set off an alarm in your room so your parents/roommates/strangers dont catch you "putting on the finishing touches"  :-//

you could also make an annoying throwie. wire up the microcontroller to make annoying sounds at random intervals and stick it somewhere stealthy.

I'd also recommend diving into something that can be controlled by PWM. Its very useful and fun  :)
